1In a glass jar macerate Juniper , Earl Gray , dates , angelica root , rosemary , hyssop , coriander , tarragon , cardomon , cucumber (medium) and smoked oysters in 90% "grape" alcohol .Juniper: 50 g, Earl Gray: 50 g, dates: 50 g, angelica root: 25 g, rosemary: 25 g, hyssop: 25 g, coriander: 10 g, tarragon: 10 g, cardomon: 10 g, cucumber (medium): 2, smoked oysters: 1 can, 90% "grape" alcohol: 1 l

2After 2-3 days, put the whole maceration into an AirStill . Fill the glass jar with water and add to the still to wash out the remaining maceration and to dilute the alcohol. Repeat once more.water

3Run the AirStill, collecting the whole off take in a glass jar.

4Using a Alcohol Refractometer to measure the off take, collect until the reading drops below 5% or until off flavours appear.

5Close the glass jar and leave for 24 hours. Measure the % of the collected product and dilute down to 40%. Adding salt to taste.salt
